Follow-up on the school menu at a state school over five academic years. Importance of the choice of the catering company

Abstract : 

INTRODUCTION
Recent studies show an increase in childhoRecent studies show an increase in childhood obesity. Therefore, it is very important to feed children properly and begin their nutrition training at an early age, so that they can acquire healthy eating habits that they can follow throughout their lives.
This study aimed to compare possible differences between the companies responsible for school canteens.

METHODS
Longitudinal descriptive study based on the school menus that schools distribute to parents of children who use the school canteen. We studied the school menu of a Teruel state school over a five-year period.

RESULTS AND DISCUSSION
− Meat is served too frequently. In addition, there is an excess of uncooked meat and industrial meat products. There was an improvement over the years studied, with a decrease in the frying and an increase in healthier preparation methods.
− Fish was served in correct proportions and there was a good variety. The preparation method should continue to be improved.
− Eggs were not served often enough and there was little variety in terms of preparation.
− Both pasta and vegetables were served in correct quantities and varieties.
− The soup served was subject to great variety depending on the year of the study.
− The variety of pulses was acceptable, but they were not served often enough.
